If you are looking for a trend, then asymptomatic cases are much more reliable. Symptomatic cases can go up and down due to conversion from asymptomatic cases.
Not really, yesterday you also have 858 symptomatic cases that were asymptomatic before. So it is 434 yesterday vs 425 today.
Probably not, Shanghai total cases should only be around 1/3 of Hong Kong. So 3000 deaths or less should be a reasonable estimation.
