Is there any reason why China subway system doesn't have any express train (maybe there is, but I don't aware) that won't only stop in major stops like those in Japan and I believe New York?

Maybe because China can still build new stations and lines currently and doesn't need it? For example, in Shenzhen, the Line 1 was so brutal fron Lo Wu station to the old airport!
In Guangzhou, Line 14 and Line 21 have express trains

The 93.982-kilometer long Meizhou-Longchuan section on the Longyan-Longchuan High-speed Railway began trial operations on Tuesday in Guangdong. The Longyan-Longchuan High-speed Railway stretches from Fujian's Longyan to Longchuan West Station in Heyuan, Guangdong province, spanning a total length of 290 km.
