Some ideas for why 3 engines
1) A very heavy and large aircraft, focused heavily on radar and sensors, electronic warfare. Carries very little munitions, or no munitions at all. Drones and 4/5th gen fighters do most of the actual dirty work. The 6th gen acts as a force multiplier electronic warfare platform and battlefield control, fitting considering how expensive they will be. 3 engines is not just for it's mass and size, but for electrical power too. Maybe even for DEWs.
2) A very heavy and large aircraft. Carries a lot of munitions. Main role is to get as close to the enemy as possible under stealth, dump dozens of missiles at point blank range and GTFO at hypersonic speeds. Hence the need for 3 engines.
