It all about cost effectiveness , sabot is a faster round ,it also has a better ability to stop anti ship missile since most of them has a harder shell to penetrate ships , so proximity round aren't enough.
It worth the money if it can defeat the missile and save the ship , replacing the ship and it's crew are just so much more expensive then saving a buck on the ammo.
Russian's don't use sabot cause the don't have the budget , and also their accuracy for terminal defense is not high enough so they went with higher fire rate to raise the chance of impact ,note that the Russian one is 10K rpm while the rest is 5K rpm-ish
This logic does not make sense, the AK-630 has a rate of fire of only 5,000 rounds per minute and the AK-630M1-2 is actually two AK-630s mounted in one turret.
The Chinese Type 730 and 1130 CIWS actually have higher rates of fire (5,800 rounds per minute and 10,000 rounds per minute) than the AK-630 and AK-630M1-2.

Same difference between 1 gun doing the job of 10 vs 10 guns doing the job of 1.

How many rounds can one gun capable of 10,000 rounds per minute churn out, per minute? 10,000 rounds per minute.
How many rounds can two guns capable of 5,000 rounds per minute churn out altogether, per minute? 10,000 rounds per minute.
How many rounds can ten guns capable of 1,000 round per minute churn out altogether, per minute? 10,000 rounds per minute.
