How many aircraft can Liaoning and Shandong both carry? 78 seems way higher than both combined.
24 each. But its normal naval avistion has more planes than carrier capscity, for attrition and training purposes.

Usn has like 600-700 hornets/ growlers (thats without f35c, and usmc hornets are also carrier capable) even though its 11 carriers carry maybe 50 something hornets/ growlers each.

French navy has like 42 rafales, even though cdg carrier carries up to 28 or so.

If ww2 experience still matters(we don't have any other, and the fundamental logic of training carrier pilots didn't change in this aspect) - in case there is potential for carrier v carrier action, horrendous causality rates are an expected norm.
And it has proven better than land-minded pilots choosing themselves over ship.

For PLAN, general carrier action is not just a chance, it's a basic scenario.
In this particular case, there is no too many - PLANAF fighter fleet in its entirety should be deck-capable, period.

We don't know what J-11BG is like.

J-16 we know has two large screens with some buttons (unknown if they also have a touch screen function).

We know J-20 has a single large screen with a few buttons on the side as well as likely touch screen function.

From some interviews with F-35 pilots I've seen, it seems pursuing only touch screen without buttons may be somewhat detrimental because you don't quite have the tactile and "press without looking" ability that buttons do for certain key routine functions. It seems to me a combination of buttons and touch, with large screens is superior.
How do F-35 pilot even press with a glove on?
