I do remember the BBC mentioning about twenty years ago that the Scottish traffic police had clocked a vehicle in the Highlands at 800 km/h. :)

Probably a harrier or a Panavia tornado. They have pretty good low altitude/speed characteristics.

May I ask why these simulators have utterly crappy graphics by modern standards? If the intent is to create as much realism as possible, at least in the instrumentation (these sims cost millions) why ignore the visual aspect and throw in 80's graphics technology?

I thought those images were footage shot by the camera carried by the plane. It was mentioned at about 7:50.

I assume you are talking about the pictures in #3032, those are not actual flight simulator like the ones used by airline pilots. For one they don't have an enclosed cockpit and hydralic actuators to simulate movements of the aircraft. They are used to help the pilots to familiarize with the avionics, training on combat tactics, etc. I don't think they cost that much and many PLAAF front line combat regiments have them.

Could it be because they were projected image rather than actual monitor display (easier for a curved surface)?

Also they might have realised that too much detail and you risk making the green simulated HUD display hard to read,(since flat projections is not the same as 3D image) so it is actually something that has been carefully calibrated and tested.
