My favourite East Asian food is and will always be dumplings and noodles, even if they are not foods of my region (as my grandma always point out)
You just cant resist the juice that you get when you pop the skin of that Shandong dumpling....Hot!..MMmmmmmm
Or the bite and bounce that you get when you chew your noodle (I prefer white noodle over Southern egg noodle at that) Favourites: Udon, Soba, Lamein and pho noodles, the really springy ones that are clear. I always have either ShanDong Lamein or pho on hand.
I remember having this drink for dessert at a Korean restaurant, basically toasted rice in sugar water. That was really good.
Don't know much South Asian dishes but Biryani and Garam Masala is good.

PS. How many varieties of (East?)Asian beef noodles are there? I can think of 4: pho, Lanzhou, Taiwan, and Sichuan. I am guessing Taiwan beef noodle is what Kilu0 talks of, with preserved vegetables, a dark broth, and calf muscle meat, is that right?
PPS. Arent most Lanzhou Hui Chinese actually Han who got converted?

I like my flounder steamed or deep fried whole and my salmon strips and catfish steamed in black bean sauce.
I don't get the taste of ruan yu(my mandarin might be wrong here, but in cantonese it is rAHn yu, a fresh water fish very popular in Guangdong but not sold in SF.) so I stick to stripped bass since they have less bones.
Sturgeon in porridge is SOO good.
I don't eat Mackeral until it was smoked which isn't Asian.
