Swiss chard..... aka 莙薘菜 or street name 豬乸菜. You rarely see people use it though, since it's more expensive than the regular sort of greens. (Southerners only use white because it's the only one we really know.)

Especially in America with its grain fed beef.... (clean American beef is a bit of a myth.) If anything I trust Japanese, Chilean and Aussie cattle raw, all else no. And never raw pork.....

tree lichen? What? You mean the wood ear fungus and cloud ear fungus? Actually, these are really good, good crunch and a very good blood(wood ear) and lung(cloud ear) cleaner.
There a Chinese recipe for ox tails? I can't imagine putting it in a traditional Chinese beef brisket stew. (Not sure if it's the brisket. It's literally called cow belly, lots of connective tissue.) Tendon goes well too. (You guys eat tendon?) The tongue is lovely also.
