Shandong had so many detailed satellite photos compared to blurry ones we have for 003. Is there any reason why?

We do have them for 003 as well.

It's just that from memory it seemed like we had more consistent high quality pics of 002, whereas in reality the satellite pictures were less consistent than we think.

are these overhead photos from satellites or commercial planes? If from satellites, what can the Chinese possibly do in response to the geopolitical situation to prevent them from being taken and released, short of building a permanent roof over the dock?

Satellites.

And the answer is nothing. At this stage of construction there's not much that useful which can be gleaned from satellites anyhow.

A better question is why do you think China (or indeed any other nation) would be willing to or be capable of taking measures to "conceal" the entire construction process of a ship as large as a carrier.

There is little point in concealing it I think. Once the carrier becomes operational you will find out the dimensions.
Besides there are a lot of details you can't get from satellite pictures.
Carriers are meant to show the flag. Not to be secret weapons.

Pictures from the building process important to understand the anatomy of the ship. However, these images can only be properly classified when high-resolution photos of the finished ship are available. So watch carefully and be patient.
