Perhaps one day a couple decades from now she will serve as a stationary carrier once decommissioned to teach aircraft handling etc. A lot of crew training can actually be done w/o ever going to sea.

Personally I wouldn't be surprised if Liaoning and/or Shandong finish up their lives in the Pakistani Navy.

Good question. My uneducated guess would be that it will be rather difficult if Liaoning needs to remain dual-purpose for her life. If not, adding a catapult might be possible at the expense of a reduced hangar.
So this whole idea might just be wishful thinking at the end. :)

Rumors say that in the planning of the Kuznetsov the installation of a catapult was not considered. In the construction of the Varyag a later installation was provided. But that would be a steam catapult, not an electromagnetic catapult.

An curious idea never a carrier without cats has been modified with, always built with cats/ CATOBAR or no cats, in more surely a heavy modernisation and in addition China going for new carriers so as you say quite sure Liaoning remains a STOBAR.

The US refit Essex and Midway-class carriers with steam catapults, so it should be possible. Maybe only one or two cats rather than the three anticipated for CV-18, it's just a question of taking the ships out of service long enough to do it. Really can't see that happening until CV-19 is in service.

Carriers got their hydraulic cats changed to steam cats. Some carriers got additional cats on their waist and at least one carrier lost his additional cat again with the next refit.

Even the tracks of the cats were changed from parallel to catapult tracks that converge.

Believe me! If a hydraulic catapult can be removed and a steam catapult can be installed with a different orientation, then a steam catapult can also be installed where no catapult has been previously.
