Do we have any clues about COMAC's production capacity?

I wonder if they'll have an initial low rate production period of a few years or go straight to hundreds a year, considering they've had years to prepare for mass production due to delays.

COMAC's production capacity is dependent on the production capacity of hundreds of subcomponent suppliers across the globe.

Indeed. I actually suspect the deliveries of the key subsystems, particularly engine, will be controlled and limited. That is, if they're allowed to continue to be delivered at all. To hedge and reduce the risk, CJ1000A needs to be ready asap. If and when CJ1000A is available, the supply of LEAP-1C will be more likely to continue.
