Can anyone point out just what is supposed to be the sub here? Surely not this blob circled in red?

then again, said blob is the only thing even remotely looking like anything that was visible in the images from june to november. june images actually showed the sub in the drydock section. and 6th of november was the last time this blob shadow/whatever was visible on sentinel hub.
Yes - if you measure it it's ~110m in length same as 09IIIB.

But why would they position a sub right to the southern edge of the drydock? Like literally a meter away? Its not like there are gonna be two subs there at the same time. Why not put the sub in the middle? (south to north) That way workers would have much easier access to the sub.

To try to answer my own question, if exterior of the sub was 100% complete but interior needed a bit more work with small pieces that can be brought in via the regular hatch, then parking the sub next to the drydock well, so a simple access bridge is needed to reach the sub, might be a simple enough solution.

Well I have no idea really but I suspect the location at the far end of the dock was to allow room for the launching barge to be moved back into its slot and leaving the sub there for fitting out may simply be due to lack of space elsewhere. All speculative, we don't even know for sure whether this was #7 or an earlier sub back in for work (although again I suspect the former).

Did some rough measurements on the EO website. The length of said boat looks to roughly match that of the previous 093B SSNs.

There is also this timeline to consider, per the EO Sentinel website:

November 1: Drydock empty, previous (7th?) boat still inside the drydock.
November 6: Drydock empty, previous (7th?) boat still inside the drydock.
November 11: Drydock flooded, visibility poor due to clouds.
November 16: Visibility zero due to thick clouds.
November 21: Drydock flooded, no boat visible.
November 26: Drydock flooded, one boat visible. <--- We're here

Could this be the 8th (and final) boat of the 1st batch 093B SSNs? Or not?

Use Copernicus rather than Sentinel Hub and the colour is better. Right length for an 093B so maybe #8.

Also look at the north side of the fitting out pier on the West side of the harbour. 6/11 - nothing there. 21/11 - something vaguely sub shaped there.

So that appears to be 8 subs since 5/22 i.e. 3.2 per year.

If a boat appeared when the dock was flooded it is probably a previous boat coming back because new boats are meant to be sent down the ramp to a dry dock.

There is no "ramp". There is a blue barge which is in a slot next to the drydock. The new subs roll onto that, it is then floated out into the dock whereupon the barge is flooded to leave the sub floating. Sub then leaves or, in the case of #7(?) moves to the far end of the dock for fitting out.
