I like this picture in particular -- CIC during what I assume would be standard operation, as opposed to all lit up for the camera crew.

Yep, although I wonder if the red lighting is exclusive to PLAN subs or it's also the standard for surface combatants. I recall seeing a photo of a surface CIC that was very dimly lit, but without any color lighting.

The captain (Colonel? *** stars?) sound pissed from 1:50 onwards. What happen? What did the sailor do wrong?

A valve was left untightened, which was described as potentially risking entry of water... it was kind of vague, I'm not sure what system it was or if there was any real risk.

Tbh I have a feeling that part of the segment may have been scripted or exaggerated for the audience. The entire segment is emphasizing the need for the crew to be performing at their highest level with attention to detail etc, and the importance of that for the military's overall competency. That particular beatdown of the poor sailor seemed a bit too perfect given the tone of the segment.

Dim red lighting is used when someone might have to look outside at night. It doesn't spoil night vision. It is likely more important in surface ships than in submarines. A submarine looks out through a periscope and so can more easily replace an eyeball Mk 1 by a low light level TV.
