The F-5 did not reach Mach 2, and the F-104 had poor lift and crashed quite often. So why should have they done such a thing?
F-104 does supersonic with straight wings... F-5 does close-in combat with straight wings as well.
At least, there should've been demonstrator variants of the J-7 and J-8 with "straight wings".
Fast forward into the future...
JF-17 has "straight wings" !

The F-104 had a tiny diamond shaped wing. And it had poor lift and was crash prone.
The Germans ended up calling it the Widowmaker for this reason.

The F-5 was a decent aircraft for the price back then but it still did not reach Mach 2.
It was an aircraft the US sold to 3rd world countries which needed some kind of combat aircraft but weren't typically involved in wars.

At least, there should've been demonstrator variants of the J-7 and J-8 with "straight wings".

With F-104 the wing area is so small that it literally could not turn.

It has a delta wing with LERX or something.
F-104 designed as an Interceptor.
F-5 designed to be agile as a Trainer and Close-in combat fighter.

Also, in the old days China was considered as a traditional Soviet fighter jet user, also a Soviet planes cloner. Chinese firearm development was quite weak and was only capable of cloning many types of firearms like the rifles, tanks(T59), submarines(033), fighter jets (J5, J6, J7), bombers(H5 & H6) and etc. It was impossible for China to get into the western style of developing jets like F-5 or F-104.
Note: based on J6, China developed Q-5 attacker later on.

PRC at those times aren't lacking of expertise. They certainly can design and manufacture "straight wings" for the J-7 and J-8 .
