Well, assuming that china didnt get those schematics, then how did ukraine/china get those 20 nk-12 engines? even if we assume they were old engines left from the soviet era, what about the spare engines/parts for future needs? unless china is planning to buy them from russia? would russia want to do that?
There was at the time no reason for Russia not to provide the engines. I can well imagine that restarting production was more expensive in St. Petersburg than in Feodosia. The production area might have been taken for the production of other matters. Yhen there was no reason for Russia to be angry about production going to Feodosia.

I believe that it was shown to be an April fools hoax at the time.

There is a slight chance of the hoax coming true, seeing that Greece are hurtling along the path of exiting the Eurozone.

I wonder if China would be interested. I doubt it because China has the blueprints and can build her own, although China could still buy some spares and engines.

Rumour was, IIRC, several months ago that maintenance had been insufficient to make refurbishment an option.

I wonder if they could carry two or even 3 at a time if they parked the Zubr perpendicular to the carrier.

Such a carrying arrangement would also make it easier to disembark the Zubrs, although there would have to be a bit of overhang, which may be a problem.

I believe they could carry two if they were loaded at a slight angle, and they would not risk a potential stability situation.

I do not believe it would be advisable to load them completely cross-wise over the deck. Any high seas or difficult sea states would cause a dangerous stability situation for the ship, and could also damage the vessels.

Here's an example of a semi-submersible carrying four US Navy anti-mining vessels:
