News from the Shanghai auto show:
  • Zeekr unveiled a 1.2 MW charger. So we have a 1 MW charger from BYD, a 1.2 MW charger from Zeekr, and a 1.5 MW charger from Huawei. China is probably one of a few countries in the world that have a robust enough electric grid to handle such chargers.

In addition to the Yangwang U8, is there other EVs in China with amphibious capabilities?

Imo even the U8 isn't "amphibious", it floats and moves poorly in water. Even BYD have said it should be used for emergencies only. To advertise it as anything else is just asking for some idiot to drive it into rushing water and drown themselves.
