Some of the anti-China Western propagandists really have no idea what they are talking about. For example, this piece from the FT accuses China of "tearing down Islam (mosques)", while completely ignores the fact that China has been building traditional Chinese mosques for at least more than 1,200 years.
As I understood it, most of the Arabic-style architecture is fairly new, as in only from the 80's onward. Prior to this, almost all mosques were typical Chinese architecture (because it is in... China!)
This is stemming from the beginnings of the relationship with Saudi Arabia (and other Middle Eastern countries).

I have also heard from elsewhere that the unfortunate this also brought Wahhabism to China.
Again, even this piece from western media acknowledges this
China’s growing engagement with more conservative Arab countries, there are those who “would be extremely pleased to see these women’s mosques and ahongs disappear.” Foreign organizations from Muslim-majority countries such as Saudi Arabia have funded the construction of mosques and schools in China; these foreign-funded institutions enforce more traditional gender roles and view women’s mosques as heretical.
So as you mention, it is funny to criticize a reaction to developments done in the last 40 years, vs. 1000 years.
Super ironic, the Weizhou Grand Mosque in the Arabic style was built to replace a Chinese style one that was destroyed in the Cultural Revolution, so they could have easily blamed communism for that one!
