Personally I think sanctions are most likely.
Damn, calm down. It won't escalate to such a worse case scenario like you're describing. The responses to this provocation must be measured, with minimal damage to China unlike the Europeans destroying their own economy through they own sanctions. Even if China doesn't have an immediate response, they could go on offensive later, escalating their responses and pushing US to sign an agreement with clauses that forces them to concretely support the One China principle and retract all of their initiatives aimed at China. Similarly to what Russia have done with Ukraine, and seeing the reactions I don't think other countries would see it as a weakness and dare to touch on the redlines like US is doing.
I understand why you're anxious, I was too as well before, but after connecting the dots from multiple sources, China is far from a sitting duck that the Western media like to portray. The responses should be measured and not self-destructive.
Sanctions is likely just a starting point because this visit is high ranking official.
Also another thing to note is that the Western Public believe China is a paper tiger and if China doesn’t response accordingly.
Their own voters will pressure the politicians to make ever more bolder moves.
If it were up to me I’d go for a direct supersonic flyby of Taipei with WZ-8. Hard to intercept and even if intercepted, it is just a drone so minimal political repercussions.
Rid the world of Nancy Pelosi. Blockade Taiwans airspace.
How?
1- There’s only so much grain/metal/oil/gold China can quickly buy before prices start skyrocketing from demand.
2- Theres only so much storage capacity for oil/grain/iron in China, not to mention grain and food imports have a finite shelf life
China needs to make clear that their foreign FX reserves essentially represents the collective blood, sweat, tears and effort of it’s citizens over the last 50+ years in the form of monetary savings they lent the world. Any freezing or seizing of their fx reserves would be considered an act of war because it is a theft of the collective trillions of hours their citizens spent working diligently in factories in hopes of a better future for themselves.

This is intentional, hopefully this will assuage those that are worried that China will throw away their economic development and wealth over Taiwan, but for those that are afraid that China will "back down", you will be right in the short-term but watch their moves in the long-term, your worries may be appeased.

That is an option but IMO it has to be visible to the average civilian. These people have been smoking 500 grams per day of 110% ultra pure copium for the last few years. They won’t believe it unless they can watch it. Otherwise, they will convince themselves that “fly by” is fake news and that bolder action most be taken in exchange for losing Ukraine.
