Assuming the picture is real, it’s hard to say if it’s just one engine that has TVC or whether both have TVC but only one is actuated.

If the left engine is missing, then the engine nozzle on the new engine must be huge since the hole is around the same size on the left and right.

It look like he's missing the left engine, engine change ?
there is apparently a drooping exhaust nozzle on the right side. what is on the left side seems harder to me to directly discern due to the quality of the photo, but I am quite certain it is not just featureless hole left by a missing engine. if it were, the inboard side of dark hole would be separated from the inboard side of the base of the right side nozzle by distance of engine separate. Instead it looks to overlap the base of the right side nozzle. this implied the dark circle is a 3D object that protrude from the back fuselage the same way a nozzle would,

I don’t think there’s a missing engine. It’s just one clearly has a dropped nozzle and it’s unclear if the other is the same nozzle but actuated. But the resolution of the picture is so bad it’s hard to know what’s really going on.

The more I look at the new photo the more I am convinced that it is the real deal. If you magnify the image you can sort of see, through the aliasing effect, the similarities between the nozzle petals and those from the WS-10 TVC engines.

Now the question remains why they are using a grey J-20 for flight testing. Did they repurpose one of the older prototypes or demonstrators or is this how it will be going forward?

They could have repurposed one of the pre-production units. But it’s also possible that this is a new airframe for pre-production testing on a larger collection of revisions so it’s getting the same treatment as the 201X series.
