The few shots from inside the cockpit shows the canards not only deflecting, but also deforming aeroelastically under load.

Besides what Siegecrossbow has suggested, the J-20 engine flame holder is located deeper within the nozzle, and its afterburner plume is also of a different hue i.e. bluish and more transparent than those of F-35.
Does it means that the canards cant take that much of a g-loading? Not good at all considering J-20 is supposed to be the most advanced fighter China has to offer

Yes, cause it would break.
Airfoils are designed to flex. This reminds my of an Indian attempt at trolling over at PDF where the guy started some threads on a building shaking.
Wings can and are designed to elastically deform more than most people realise. Having said that I don't think there is a video where it shows canards flexing. That would be cool if captured on video though.
