Note in the top picture he has a little speed, and the vortex is very nice and tight, and streaming out behind the leading edge, as the pull-out develops, the vortex has loosened up and the vortex is wafting upward as the Angle of Attack increases, and the wing meets the "relative wind" at a steeper angle, prolly around 18-24 degrees, possibly a little more.
These vapor/vortex pictures are instructive, and in reality almost as good as wind tunnel pictures. Now we don't know the exact airspeeds, or G-loads, or angle of attack, but these pictures are a wealth of information about each of those aspects, and together, we can piece together some relevant performance data for the J-20!
