If it is eight all together then the plan has a problem since you count the airframes used for static stress test as well.
They may well have static test aircraft which we are not seeing rolled out and flying. My guess is that there are others.

I took a look at the sources and they seem to be fairly trustworthy.

Editted: looks like they've started a serial production of J-20 prototypes. No. 2014 should be out this year.
Not serial production. They might be building a batch of them.

I think the F-22 program comparisons here is pretty good. Not to say thtat you won't see any changes if they find problems in flight testing, so I wouldn't say it's completely frozen, but the changes will be hard to spot compared to what we've seen so far.

Do we know why they skipped 2003-2010? Would these be static testbeds?

I think it's more likely that the gap marks the distinction Deino referred to between YF- and EMD-equivalent airframes, much as software might go from beta 0.4 to release version 1.0. There's probably a static airframe or two around, but why would they need 6+?
