Yea get the ban hammer on sugar in dishes! Master of vinegar sauce making eh, sounds like a challenge, forum war? JK JK

Try this sauce if you like garlic, salt, sesame oil and water. Get a mortar and half a clove of garlic, pour salt in it. Pound that mixture until it is mush, put the mixture in a dish, and pour sesame oil half a spoonish, add some water mix it all up and enjoy. I am enjoying this dumpling sauce currently, a lot of my western friends love it.

Sounds delicious! I'll try it.

Also about the sourness of tomato. I think it can also be cooked off since most agents that give sour taste are also highly volatile.

The sugar doesn't really make the meat sweet.... at least I could never taste it. But marinating meat is nothing but salts is going to make your meat dry and/or tough.

Recipe sounds very good indeed....
but where can I get a mortar? The military won't even let us own one, neither does Nancy Pelosi. :D

You aren't the first one asking for recipes around here.... no one showed up theirs.
This is my version of spaghetti sauce.
Sizzle bacon until it is as dry and brittle and crispy as crackers, crumble.
Smack and chop some garlic and fry, use the leftover bacon grease if you like. Take out and leave along side with bacon.
Sweat an onion, I do mine julienne.
Add bell pepper; carrots and celery if desired.
Add either spaghetti sauce or straight up tomato sauce
- In the tomato sauce I would add garlic powder, basil, and oregano, maybe paprika and I usually add Zergut bell pepper appetizer, especially if it's been opened a while.
Add chili flakes, powder and/or paste to your taste.
I usually add dairy in mine, usually sour cream, to give it a tang. Tried yogurt but the stuff cuddles up in the heat. I add a little honey mustard too, again with the tang.
I add a little corn starch because I like my sauce thick.

I usually eat it on brown rice. (Too thick for spaghetti.)

I sprinkle on the bacon and garlic right before serving.
----
Off the top of my head, this is pretty much it.
Beef marinade - lemon juice, soy, and ginger.
"instant soup" for your ramen- fish sauce, soy sauce (again)

Got a recipe for a vinegar-dish?

The easiest and simple dish I can think off for vinegar is cucumber+vinegar (summer dish). Get two asian cucumbers not the ones you get here that looks like you know what. The asian ones are thinner and got more prickly things. Wash it, some people like to peel the skin off, or if you like the skin you can scrap some of the skin off. After that you can either cut them into 2-3 inch parts and then take a durable flat thing and smash the cucumbers into decent sized "cubes" (or pieces) and then put them in a dish and add vinegar and or garlic. Mix all of that up and you have a nice cool summer dish.

To add to that, you can boil some soy skin (I'm not sure this is the correct term. It's dry soy sheet, fu3 zhu2) and add it to the cucumber. Then add some salt, vinegar. I have to admit that when I make it, I can never get that wonderful taste that my mom gets with this dish. But when you get it, it's delicious.

That doesn't sound a hang of a lot different to the gerkhins you get with Mc Donalds or Burger King.

Can anyone tell me what these might be, thanks.

1/ They look like thick deep fried egg noodles covered with some sort of sticky honey sugar mixture and cut into approx 3x 2" squares .

2/ Round deep fried mixture with sesame seed on the outside surface with a sweet filling inside consisting of red bean? or coconut mixture?, usually golf ball to tennis ball in size.
