Extending the rear would probably help a lot with firing clearance and helo ops, and/or put the VLS tubes on the same deck height as the rear gun.

Wanting to and being able to are two whole different things.
Any PLAN destroyer beyond an Arleigh Burke flight IIA in capability and displacement fielded within the next two decades will be a bit unnecessary.
I think what he's trying to say is even more ludicrous than it first appears. He seems to intend "should" to mean more "will likely", as in "future PLAN warships will likely be designed similar to DDX".

Yeah, wouldn't a pointed deck be a terrible waste of space? (In that it could be bigger without changing the hull)

Do you really need to mount a "Chinese AEGIS" on it though?
The Varyag is going to have the 052C's AESA panels installed on it, so it's not unreasonable for any future LHA to have a similar accomodation.
If anything I'd almost expect it to.
