Well goddamn 2.5 weeks passed since the first catapult reveal and all they've done is finish up on the exterior of that one catapult, I was hoping for more dismantling efforts on the other sheds
Is the huge crane there to remove the remaining two EMAL sheds?
Yes. There's no other way as far as I know.

Looks like initial testing is possible with the catapult on the waist deck, while the other two catapults remain covered.... and maybe not even installed yet.

This may have been answered long ago so I apologize in advanced for asking but does the 003 have AAG or still hydraulic arresting gear?

First of all, something to clarify.
AAG is the abreviation of US system. It is still hydraulic, mostly at least. 70% of energy is absorbed by water twisters, only 20% by electrical motors, and 10% by super-capacitors, the 30% electrical energy is then dumped by resisters as heat.
There is nothing indicating that PLAN adopted AAG like system. The only time I heard about the arresting gear is when Ma Weiming claimed that his arresting gear is the reverse of EM catapult. By that saying I believe his arresting gear uses EM means to absorb most of the energy. I am 99% certain that Fujian uses EM arrestor.

Some more thing I just found. It is an interview of Fujian's officer by CCTV-7.
Here is the translation of his words regarding the subject (the subtitle in the screen capture). as crews of the first CV which is equiped with electrical magnatic catapult and arrestor ...
This is interpreted by most people including myself as EM catapult and EM arrestor because Chinese grammar determines that the adjective "electrical magnatic" applies to both nouns of "catapult" and "arrestor" if not specified otherwise.
However, some people may interprete that "electrical magnatic" applies only to catapult, not the arrstor. In this case, arrstor is an unknown. But this would be a very unusual way of expression in Chinese, and I assume that this officer was reading a prepared script, so he would not have made such mistake.
This is why I said that 99% that Fujian has EM arrestor, leaving 1% to possible improper speech of the officer.
Another note is that people had doubt of Fujian using EM catapult before and still wonderring if EM arrestor is used is primarily because of the bad reputation of EMALS and AAG on Ford. However Chinese EM catapult and arrestor are quite different from US counterpart in technical solution (DC grid decoupling frequency and power semiconductors versus AC grid and electro-mechanical), although caution should be taken on all new technology, the level of doubt due to EMALS and AAG is unwarranted.
