Just have to look at the Royal Navy and it's new carrier(s) which will hold 3 times the air wing it will initially go to sea with!
Good example, that these numbers say nothing. The QE2 gets 12 aircraft, is concepted for 36 aircraft and might be large enough to carry 72 aircraft.

The can carry and operate +70 F-35 statement for the QE-class by that captain appears to be typical British bullshit. There is literally no hangar space for so many aircraft even ignoring that the trend goes to less aircraft to improve sustainable sortie rates.

There are good reasons why the QE-class is designed to operate for 40 aircraft and not for the filling every inch of the carrier with F-35B fighters mode.

You got it! There are good reasons why Type 002 will be designed to operate 35 aircraft - even if there seems to be space for 70 aircraft.

My second point all of these comparisons seem to be predicated on a US vs China conflict. In the Western Pacific and Indian Ocean, 30-40 Flanker class planes on a moving base pretty much ensures no one's airforce is going to want to mess with you having 50 doesn't buy you that much if anything more!
Not true. In the Indian Ocean/Middle East region India, Saudi Arabia, UAE, Egypt, Iran, Israel, Pakistan, and in the Western Pacific Vietnam, Japan, Korea, Taiwan, even Singapore, could all mess with 36 J-15s no problem. Many of these nations are (currently) on friendly terms with China, but very few of them could be considered reliable strategic partners. Maybe only Pakistan.

These days, it's generally agreed on that overall efficiency is at its greatest when the air wing is 50-60% of total carrying capacity. Aircraft require a lot of space for upkeep and maintenance in the hangar, and deck space is still more valuable. Clog that up too much, and things start going downhill.

This is why even though Liaoning can carry around 24 J-15s in the hangar and another 15 or so on the deck for a total of 39, she won't ever be carrying that much in any realistic scenario. An air wing of 20-25 aircraft is hence ideal, if going by the ratio. More could be carried if the J-15s weren't so darn big.
