Because the fact that a random virus accidentally infects a human sounds so boring. Conspiracy theories are sexier. Throughout history of humankind, every time something like this happens, you get conspiracy theories. The only difference is that this time around, it's an election year in the US and the virus happened to come from China. So all the conspiracy theories get extra fuel.
You would not believe the kinds of conspiracy theories that some lay people typically have for any kind of seemingly puzzling natural events, from all kinds of secret societies (free masons), to aliens (little grey people, green people, lizard people, etc), to time-traveling earth beings coming back from the future, to beings living in fifth/sixth/seventh/eighth/ninth/tenth/eleventh dimensions... The crazier your theories are, the more people will believe you.
Many think that these conspiracy theories are creative, and they must be creative people to believe these theories. Actually, they are the most boring and the least creative bunch. Any time some seemingly weird things happen, the only thing you can think of is some evil government plan or alien invasion? Come on guys, at least be a little more creative. The natural world is the most wondrous and packed with unbelievable stuff.
