And as long as most of Saudi military uses US weapons, they will tread very carefully about not using USD.
Those US weapons are also under question marks now. Everything is going to Ukraine and more important American colonies in Europe who suddenly increased their military spending exponentially. They use US weapons now but will have to wait for years to acquire new ones again.
Not to mention that Saudis have leverage over them now in form of Chinese weapons which weren't there in the past. There is now a cheaper Chinese alternative for every weapon system imaginable from the US. Only a 5th generation of fighter aircraft lacks for now, but there is FC-31 in the works. They buy the US ones now because of tradition, not because they are superior or there are no alternatives. That's leverage over US.
They won't change the US dollar for their oil pricing for stability and practicality reasons however they probably already sold some oil to China in yuan. There is no stopping that. Xi Jinping at that time said that they should sell MORE in yuan, not that they have yet to start selling only now.
At the end of the day, the US needs Saudis more than the Saudis need them now in 2023, it's a new age. The US can only provide imaginary things like "protection" from Iran while China could provide 5 other things better while also being more connected to their system of ruling.
