Well, maybe to be in keeping with its stealthy design, they might make custom mini rocket pods that fit in the side weapons bays that they could bring out for zoomie fun.

Nah the whole charm and ironic humour would be to keep it exactly the same and as antiquated as possible. Ideally the same pods used by J-7s.

Are JSDF F15's still built by Mitsubishi heavy industries?

I guess the ones the J11's encountered would be F15C (J) variant? Would it be a close dog fight when they are WVR?

It happened in 2014 AFAIK. I'm not sure how JDF trains their pilot in WVR combat but from what i gather from Chinese video the 2 F15 cant shake them off the tails, decided do release some flares and make a low dash back.

Engagement started off at 40-50km, so it wasn’t strictly a dogfight.

That's expected. During the 1992 exercise at Langley between the Su-27 and the F-15, American pilots realized that when they started on the Flanker's 6 o'clock, they couldn't stay there and when the Flankers started on their 6 o'clock, they couldn't shake them.

Eagles (with possible exception of F-15E) have superior aerodynamics to the Su-30MKK. What transpired that day appears to be a differential in piloting skill.
