Photos normally don't show "true" colors as viewed by human eyes. Many camera setting can affect the colors such as iso, shutter speed, white balancing, exposure compensation etc. Auto setting and manual setting can also make colors to appear differently.

Natural lighting can also affect color of the photo object.

The answers to your question can be many, and they can be all correct. Color hue, HDR, color saturation, over exposure etc.

So the E-7 balance beam AWACS is going to be replacing the E-3. Can someone explain how a balance beam platform can outperform a rotating dome radar platform?

Because what's important about a AEWC's primary mission system isn't the physical configuration of its radar but rather the complexity and sophistication of its radar itself, the battle management system, networking.
Think about when E-3's primary mission systems were designed and produced versus what era of technology the USAF's new E-7s will be from.

A better question should be why on earth should the configuration of a radar system be seen as relevant when the technological disparity in era is so huge from the outset.

(Incidentally E-7 doesn't have a balance beam radar configuration like erieye or KJ-200, rather it has a continuous wedge design that allows 360 degree fixed coverage. But the above point stands.)
