What really happened during the PLAAF and PLAN joint exercise around Taiwan a couple of weeks ago? I can’t find any details on it.

Taiwan has simulation lab for F16 avionics?
I dont know about that. While it's called a lab, the facility more closely resemble a maintenance facility. It's only called a lab because it is used to test out and integrate components.

Timing is certainly interesting since before this Taiwan was all ‘China got no chance!’ And now they are singing a rather different tune.
I noticed that too but I don't think it is only because of this joint exercise. ROC military say China can launch what it termed "soft and hard electronic attacks", including blocking communications across the western part of the first island chain, the string of islands that run from the Japanese archipelago, through Taiwan and down to the Philippines. So there are probably continuous demonstration of PLA EW capability

I bet there are different intentions behind the scenes. How is it possible that Taiwan woke up one day and suddenly said that China could neutralise its defences?...

IMO its most likely that Taiwan want to make the population fear about a potential attack and thus try to consolidate power for the "greater good" and for "national defence".

No. It is disturbing because I heard absolutely nothing about it. It is like an information blackhole. I don’t even know when the thing ended. Usually this information is available.

Very possibly, but also just as likely China decided to give them an actual taste of their EW dominance to check the increasingly brazen and reckless salami slicing towards war Taiwan has been actively indulging in of late.

EW is very hard to assess in peace time, and is also certainly a field where it is possible to have a paradigm shifting event that completely changes all of your assumptions and projections. On top of that, if Chinese EW really was light years beyond what Taiwan thought the mainland capable of, it also suggests significantly competent and effective opsec that could throw all sorts of other assumptions and assessments into serious doubt.
