I wonder why Iraq want to produce both AR15 and AK rifles in different calibers. Wouldn't it be better to just let AK die away and continue with 5.56 CQ?

Large stocks of ammunition, foreign sales, different weapons to different units. The AK is ubiquitous and ammo is common in the Middle East.
