However, it is noted that when this scene is shown, the background narrator voiced "Listen - This is the non-stop heartbeat of the new carrier." I presume that the "new carrier" refers to CV-18 Fujian.

However, since anyone across the globe already knows what CV-18 Fujian would look like on June 17 this year (and already having a pretty good idea on how CV-17 Fujian would eventually look like), I don't quite understand as to why is there a need to cover the whole carrier up under a wrap cloth?

Trying to fill up the surprise? Or does it indicate 004, or even a new class of warship? Or that I'm just thinking too much?

Non-stop might be referring to a Nuclear powerplant in this case. Just my speculation.

On point 2, it happens now occasionally that US runs into CN patrols in the Pacific and they have Russian ships attached to them.

I think in the event of a massive war in Asia, Russian elements would disperse and blend into PLAN ones. It greatly improves their survivability, and there's decent evidence that there are command systems existing to integrate them.

Likewise Russian SSN/SSGN become far more survivable when they make it into PLA aircover + 041 infested waters where US can't send subs in without great risk.

I actually see this as the likely core of a Liaoning/Shandong Strike Group; i.e the Carrier, Type 901, and 2 x Type 055s. With 2 x Type 055s required to compensate for the range/payload limitations of the Fixed-Wing aircraft operating off a Ski-jump.
