It's quite obviously a 2 way street as far as intelligence and information goes, PLAAF learns about western tactics and training, the instructors learn about PLAAF equipment and skill levels and can pass this back to their home countries. No doubt PLAAF will have taken this into account in setting up this program.

Those pilots and their home nations are in a much better position to take advantage of contracting instructor roles. The information offered may very likely be poor or intentionally misleading but these are going to be no doubt more to do with general strategic stuff and decision making rather than actual flight training. Flight training is done in house by PLAAF and there's rarely a need to have a foreign pilot sit in a cockpit when trainers and training programs have been around for decades. The foreign instructors are more like consultants on how western airforces operate and "think". They are 30 to 100 of them allegedly (by tabloids but possibly with good sources) and that's simply a consultation role.

The issue with PLAAF is they would be questioning a lot of the information and cross checking them thoroughly. Unless all the UK pilots had a misinformation tutorial program, they probably would either be giving honest good information or making up clear bs in which case their contracts would be terminated. The hope is probably to glean through the bs and collect some valuable insight by stitching the info together and forming a better idea of how western airforces operate and how their fighter pilots are trained to think and use their fighters.

last one seems like the new HMD we saw couple months ago

The last one is indeed the HMD that J-20 uses, visible by a couple of distinctive details like the latches on the side of the helmet, as well as the central hole on the helmet above the eyes, for what I suspect is the integrated FLIR, partially covered by the dark visor.

.... but it isn't new. We first saw it back in like 2018.

you could be right, somehow i got the illusion that the helmet in the most recent image (the one pilot salute in the cockpit) was more rounded than previous
