I think that's because a greater % of East Asian women, more so than other minorities, are about taking the easiest possible climb up the socioeconomic ladder. Their companionship is a commodity to be traded for the best possible socioeconomic price. And furthermore, these East Asian women's families and cultures tend to support that ambition or approach instead of ostracizing them. This is fundamentally a social and cultural problem. It's what happens when the pursuit of status and/or wealth is the lodestar by which one navigates their romantic opportunities.India was heavily colonized by the west, but you never see Indian women being extra attracted to western men. Same thing with Arab women. They are not rejecting their own to fall for western men. So one needs to reflect why East Asian culture produces women who are worshipping white men so much.
I think East Asian culture is too open to foreign marriage and dating in general. While Indian or Arab cultures see dating outside your culture as extremely negative. That's why you see this difference.

To be fair, the opposite can sometimes also be seen in the West. I was at a major hospital the other week and saw an attractive white doctor whose ID badge showed a very Chinese last name. She was not obviously not adopted, nor was she of mixed heritage. She clearly married into it. Not saying one or the other is better or worse. It's just a choice people make that is driven by a mix of personal and social incentives or disincentives.

When your definition of modernization is defined by catching up to the West, you're going to end up internalizing their standards. So as a consequence you see in the 80s and 90s, East Asian women adopt Western fashion trends and style their hair in curls to look more Western, and in the 00s and 10s, decorate themselves with Western luxury items, get eye jobs and nose jobs to look more like white people, etc. Preferring white men is just another facet of the same West worship that's been a double edge sword - on one hand, it allowed East Asia to develop much faster than the rest of the world; but on the other hand, it's left a deep mark of internalized Western standards.
