There is a concept called fly the plane in emergency while the other pilots troubleshoot or read the manual... single pilot operation of a large airliner is just asking for trouble.... about as good an idea as having two large aircraft fly intercontinential routes so close to each other that the slipstream saves fuel. Its one pilot heart attack away from some kid who played flight simulator to taking over, unless you plan to have some sort of remote control capability so remote pilot from ground can take overYea. Imagine trying to figure out why the engines are all fucked up while gripping the control wheel as you plunge towards the ground. There are some cases where the Captain had a medical emergency and the co-pilot takes over. These are rare cases but it’s more then likely not comfortable for the passengers or big commercial pilots.
