As far as stereotypes go, we have stereotypes because many of them tend to be based on truth. Simple as that. They don't just pop out of thin air.
If you think describing the Chinese military strategy as "mindlessly throwing more men against the enemy", you've got a LOT to learn about the Chinese military. Fortunately, you are in the right place.
Quite the contrary, the PLA is probably one of the better militaries to face off against a zombie apocalypse. They've got the manpower to sweep entire cities clean and the discipline to hold together against this terrifying foe. They don't need to rely as much on "shock and awe" tactics which do nothing to zombies. They have thousands of years of military experience to draw upon fighting large numbers of melee-based opponents.
Back in the Three-Kingdoms era, Zhu Geliang lured Cao Cao's soldiers into a trap and burned them alive. It would be much easier to employ similar tactics against mindless zombies.
Forget 19th century infantry lines and single-shot rifles, as depicted in WWZ. The most effective way to destroy zombies is to lure and corral large numbers of zombies into a location they can't get out of, and then purge the area with napalm fire.
If you have to send infantry in, always back them up with a flamethrower. Used properly, the flamethrower is far more effective than bullets against masses of zombies.
