How does a UCAV is supposedly shoot down a DF-21D coming down at the carrier at a high velocity speed? Is it suppose to act as a warning to the carrier battle groups so that it can change direction or actually confront the on coming ballistic missile?

their UCAV idea isn't to defend against the ASBM but rather avoid it completely.
ASBMs big hoorah is its sheer range (and speed I suppose). If a carrier can sit outside of the kill range and still send flights of aircraft to bomb targets on the other end, then ASBM is effectively countered because it won't remain relevant anymore.
Of course the problem with this approach is... what if an ASBM with longer range is developed, what if tankers refuelling the UCAVs to and from the carrier are shot down, what if the IADS of the opposing force can detect and interdict a number of your stealthy UCAVs etc. But for the time being, a long ranged carrier based UCAV is a logical response to ASBM (combined with a greater focus on ABM, and a change in doctrine of course).
