Fair point on the image quality, but I thought the probe cover is attached to the probe itself? I'm under the impression that it's NOT a cover that can rotate open/detach.

Sort of. For modern enclosed IFR probes, the probe cover often is connected to the probe itself, but full deployment of the probe itself can involve the "cover+probe" opening and then "extending" (as in your picture) to be ready to receive fuel.
If that picture is showing an IFR probe cover, what I'm thinking is it probably isn't fully deployed in a position ready to receive fuel and thus the probe is not visible from that angle.
Alternatively it's also possible the cover itself is just the "forward" cover (which opens up to allow the probe+cover apparatus to angle outwards before the forward cover closes).
Imo either way it's not worth discussing in too much detail.
