There seems to be a lot of panel gaps and obvious screws compared to the F-35. I wonder if this is a quality issue and if it would affect stealthiness.

Ceramic and carbon fibre are not mutually exclusive terms. C/SiC stands for "Carbon Fibre Reinforced Silicon Carbide Composite ".
