A J-20 with WS-10 engines doing a practice run.
But no serial numbers visible
If you look closely, the sealant is still there but gray in color like you hypothesized.

Looks like they made one that's more compact and meticulously matches the paint of the aircraft.
Could it even be retractable?

Note the non-functioning electro-optical device and the absence of dark edge treatments along the bay doors. I think this could be one of the test birds, which would explain the lack of serials.
