Is there any expectation or possibility that the process of the fitting phase of Fujian will be faster than the Liaoning and Shandong?

That's not going to happen.
Fujian has plenty of new tech involved, so do expect the fitting phase be, at best, about the timeframe that of the previous two. Though if the CCTV7 ever runs a newsreel about the EMAL test shots (even just the land facility one) then it's safe to bet the sea trial won't be far behind.

Only thing remotely indicate fitting of 003 would be faster is that they didn't mention fitting out in CCTV's news reel and that's it. OTOH we can visually confirm there's still various radar, sensor, air defense, and the most important and complicated, EMAL system waiting to be finished.

The three Chinese ones don't seem to have them. I wonder if it's because of the difference in powerplant arrangement.

Also, what's the rational behind the different in the back, the Fujian seems to have a much smaller opening than the US counterparts.

Assuming that you are not here to troll...

Those "huge holes" you're talking about are where the deck elevators located.

You can't see them because the pictures you so choose take from different angles - starboard to aft with the US CVN and port to forward with Fujian. Then again, thus far no picture available of Fujian taken at starboard side. Of course, it will be a few more years for such picture be available because Fujian will be spending those time fitting out at the pier, as it is now so.
