Those look like mockups, although it's hard to tell with the low resolution.

They are mockups. Real ones are flown in from a land base.

Is it possible they will launch a drone or something to test the catapult?

Who launch the man aircraft? Does the pilot press a button to initialize the launch sequence or is it control by another guy on the ship? There is an green button pressed at the 29 second mark before showing the catapult observer.
