Two carriers on the same screen aren't necessarily that important.

Having two carriers on screen with a decent airwing shown, accompanied by an extensive and capable escort fleet, and both carriers having each embarked on multiple years of workup and multiple open Pacific exercises prior to this, OTOH makes this dual carrier exercise a bit more notable and more potentially useful.
This is propaganda, it serves its purpose, it cannot and shouldn't go deep, otherwise not many people can get it.

It is important, because those are obviously statements with message.

The message is far more potent with a larger complement of fighters and a more potent escort fleet that's part of a large navy overall, than if the airwing and escorts were far smaller, drawn from a smaller surface combatant fleet with carriers possessing lower readiness/maturity.

Two carriers today, a swarm of carriers tomorrow; that is what nightmares are made of. I wonder if any smart-ass kids is dressing up as a Chinese aircraft carrier for Halloween tonight. I will give him/her all of the candies.

I immediately thought of the Indian Navy's dual-carrier Vikrant-Vikramaditya operations.

Well, although both has been on active duty at the same time before a lot of time one is undergoing maintenance and only 1 is on active duty.
Showing both are combat ready right now might be useful to discourage any risk taking by rogue actors following the event next week
