May I assume that the two missile attacks were fired simultaneously from the same launcher vehicle?

Looks like 2 missiles launched each attacking its own targets.

I've seen them demonstrating launching 2 missiles to target a UAV, each of them successfully hitting the same target seconds or so apart.

What I mean is that the two operators are probably sitting side-by-side. Just like the tracked variant AFT 10. So it is possible that this wheeled variant is also capable of firing two missiles simultaneously from the same launcher vehicle.

This is not the first time that I have seen HJ10 anti tank missile systems participating in live fire drills with partial loads. Normally HJ10 ATGM system carries eight missiles. Is that a safety measure for exercises?

Probably not every live fire exercise requires a full complement of missiles.

If a fighter aircraft is doing a live fire exercise with a AAM, they often don't max out their carriage of weapons on all stations either.
