Contrary to what he is overyhyping, it is clearly NOT a surprising confirmation of being in service since this is known since some time and even more it is just a prototype.
IMO it fits to 787 - like all other Y-20 prototypes 781 - 789) - and even more it is a prototype since it has still the huge red flag on its tail and not the low-visibility markings we know already. But that‘s probably why „Nickatgreat“ banned me.

Any idea if the Y-20U have their rear loading ramp removed to save weight like the IL-78, or just a 'simple' roll on palletized system?

I think the rear loading ramp is removed. The structure that's supposed to be the rear loading ramp is in a different color compared to the rest of the fuselage, and I believe we've had reports that the 3rd refueling drogue is more permanent than just a 'simple' roll on palletized system.

TBF thermal insoles have been fairly common for skiers for some years now but I guess not standard kit in every army.
