After critical operations or surgery has been conducted, the more stable cases can be helilifted back to the mainland. While no info has been provided on the PLAN hospital ships, yes, it is likely they can handle the casualty load. What is important is that the evac trip to medical treatment is short, and the rate of evac is high enough. A hospital ship near the coast does that.
In an amphibious landing every piece of equipment brought ashore takes up scarce lift resources. It is also during the assault that most casualties takes place. MASH hospitals won't have time to be set up during the assault. Neither do they have the capacity. All one can hope for is rudimentary treatment if there is no Hospital ship nearby.
That is after the wounded's situation have been stabilised. Another difference is, field hospitals have already been erected, so not all need to be diverted to the ship.

What most likely happens if the PLAN does reach Taiwan is MASH type units will be established or medical facilities already on Taiwan will be used if possible.

The US has their hospital ships in the Persian Gulf but not all the wounded go to those ships. There are other facilities and then they get flown to Germany... a much further distance than Taiwan to the mainland.
