As to the J-15S. I guess somebody did a heck of a job of PSing the canards in there (which may be...I found the pic with a search for J-15S and it was on one of the Chinese military sites -

I'm a little dubious. Somehow the cockpit seems to sit too high from this angle.

Chinese Su-30s and Air Force personnel at an International ground-attack (with rockets) competition in Russia:

The English name for the competition is "Avia-dart". Aside from ground-attack, pilots are expected to perform low-altitude aerobatic manoeuvres as well as evasive maneuvers.

Why use SU-30s instead of J-11s?

Most likely security issues since Su-30s are Russian imports and PLAAF doesn't usually send indigenous aircrafts to foreign exercises. Another reason is probably not to offend the Russians by sending unlicensed flanker copies.

So send J-10s instead. Are the PLA plutocrats afraid to show their hardware abroad?

Just in case you didn't know J-10 is also indigenous. PLA has always been secretive with their self-developed systems. Countries like to follow their own paths and traditions. Btw I don't think PLA is dominated by wealthy generals. They receive better pays and pensions just like their western counterparts.

J-10s are for sale to foreign governments, so showing them to the Russians doesn't pose any more risks than Chinese-adapted SU-30s.
