Middle is for the anti-ship missiles.
The blue thing is not a door it's looks like a temporary separate structure.
There appears to be quite the deck space mid ship. Would be interesting to see if there will be more armaments than the expected 2 x 4 ASM launchers.
Is this section amidships meant to be cut out afterwards?
Unlikely. On other similar ships in the PLAN before, they are panels which may either move to expose certain things (such as inflatable lifeboat pods if the ship needs to be ditched, or for RHIBs if a ship has them in that position on the outside), or could also move for other things like slant launch missile exhausts.
For the rectangular panel near the bow, we can see it is at the same position as the pole used for replenishment, so probably the panel is movable to expose the deck at that level for replenishment.
