The number of poles a world has isn't something China can decide, all China can do is be a pole, it's entirely up to others to match China. If only one country can, it'll be a bipolar world, if multiple can, it'll be multipolar, but if nobody can, it'll just be a unipolar world under China.
As it happens China do have both the intent and ability to dominate every industry and every technology, its not necessarily phrased that way, its phrased as "we must break foreign monopolies" and "we can't be behind to foreigners", which at end of the day just implies China has to be #1 in everything. It also happens only one other country has that intent, which is the US, while neither US nor anyone else actually has that ability. This invariably means it's just going to be practically a unipolar world, even if its not China's explicit goal, within which America pretend it's not and China lets them,
And you're also right that China don't want a bipolar world, because as much as people make a big deal out of American exceptionalism, most have no idea the true level of exceptionalism that a country that has called itself Middle Kingdom for 2000 years implicitly believes in. At end of the day China do not consider anyone else as equals, never has, and never will. China does not share the European desire to bring others down or enslave others, but China also has no desire to hold back and reserve any power for others.
